Avocado Topped Sweet Potato Toast

Ever tried toasting your sweet potato?

It makes a tasty substitute for bread and helps increase your vegie intake for the day. Just pop a 0.5cm thick slice into the toaster and its ready for your favourite toppings!

Serves: 8


  • 1-2 sweet potatoes
  • 1 large ripe avocado
  • 1 punnet cherry tomatoes
  • ½ red onion, finely chopped
  • 2 tbsp fresh herbs (parsley, basil or mint would work well)
  • Cracked black pepper, to serve


  1. Cut ends off sweet potatoes and slice into 0.5 cm slices.
  2. Place sweet potato slices in toaster. Toast. Flip over and toast once more. Some toasters may require additional toasting time.
  3. Spread avocado onto sweet potato slices. Top with cherry tomatoes, red onion and fresh herbs.
  4. Season with cracked black pepper.
