Mixed Bean Bowl

This mixed bean salad requires minimal prep time and is a protein packed snack.

Legumes are also a fantastic protein alternative for vegetarians and vegans and not to mention cost-effective too!

Serves: 6-8


  • 1 tin four bean mix, drained and rinsed
  • 1 red capsicum, deseeded and finely diced
  • 1 cup sweet corn kernels
  • ½ cup fresh flat leaf parsley, chopped
  • 1 lemon
  • 2 tbsp extra virgin olive oil
  • Cracked black pepper, to serve


  1. Place beans, capsicum, corn and capsicum into a large bowl.
  2. Season with lemon juice, extra virgin olive oil and cracked black pepper.
  3. Lightly toss to combine.
