Mushroom and Ricotta Cups

It’s not hard to get creative with incorporating vegetables as a snack!

Try our Mushroom & Ricotta cups recipe. It’s as easy as popping a couple of mushroom cups into a sandwich press and topping them with ricotta cheese. Season with whatever fresh herbs you have on hand and freshly cracked black pepper and voila!

Serves: 4


  • 4 large flat mushrooms, stems removed
  • 1½ cups ricotta cheese
  • 2 tbsp fresh herbs (basil or parsley would work well)
  • Cracked black pepper, to serve


  1. Place mushrooms into a non-stick sandwich press to cook. Alternatively line a baking tray with paper and coat with extra virgin olive oil spray; bake mushrooms for 15-20 minutes.
  2. Once mushrooms are cooked through, top with ricotta cheese and fresh herbs.
  3. Season with cracked black pepper.
