Recipe: Burritos

Mexican food has grown in popularity in Australia over the last few years – and it’s more than simply tacos and nachos. Try this tasty mince tortilla for a delicious and healthy Mexican lunch. Quick and easy to prepare, and a huge hit for the family! 

Preparation time: 5 minutes
Serves: 5


  • 1 tbs olive oil
  • 1 onion, chopped
  • 1 clove of garlic, chopped
  • 500g mince (lean meat such as pork)
  • 1 pack of fresh tortillas
  • 1 tbs fresh coriander (or 1 tsp ground)
  • 1 tsp cumin, ground
  • 1/2 tsp chilli powder
  • 400g red kidney beans
  • 500g reduced salt pasta sauce

Cooking method

  1. Heat oil in a large saucepan, add onion and garlic. Saute for a few minutes until onions and translucent.
  2. Add mince and cook until brown.
  3. Meanwhile prepare burritos according to directions on the packet.
  4. Add spice to mince, and allow to cook for a few minutes.
  5. Add beans and pasta sauce. Allow to heat through.
  6. Serve immediately with tomato, lettuce, cucumber, capsicum, mushrooms, avocado and a dollop of light sour cream.
