Recipe: Grilled Mushrooms with a Garlic Yoghurt Dressing

Check out this simple, tasty treat as a warm side dish, entree or a hearty snack that is low in GI, high in dietary fibre, rich in protein and many of the B group vitamins.

Serves: 4


  • 1 tbs reduced salt dairy spread
  • 1 garlic clove, crushed
  • 4 large field mushrooms
  • 1 cup low fat yoghurt
  • 1/2 red capsicum, diced
  • 2 tbs fresh parsley, chopped
  • 1 pinch pepper, to season

Cooking method

  1. Heat dairy spread and half the garlic in a frypan until melted. Add mushrooms and saute for 2-3 minutes.
  2. Remove from frypan, place under a hot grill and cook for a further 5 minutes, or until tender.
  3. Combine yoghurt, red capsicum, parsley and remaining garlic and season to taste.
  4. Top mushrooms with yoghurt dressing and serve.
