Recipe: Raspberry and Yoghurt Bircher Muesli

Brighten your morning with a delicious breakfast using in-season raspberries, apple and pistachios. A fresh and easy meal you can make in advance and have over a few days, or enjoy with the whole family.

Preparation time: 5 minutes
Serves: 4


  • 1 1/2 cups rolled oats
  • 2 tbs pepitas (pumpkin seeds)
  • 250ml reduced fat milk (soy, rice or dairy)
  • 1 apple, grated
  • 1/4 cup orange juice, freshly squeezed
  • 1/2 tsp orange rind, finely grated
  • 200g raspberries, fresh or frozen
  • 200g low fat natural yoghurt
  • 2 tbs pistachios, cracked from shell

Cooking method

  1. Combine oats, pepitas, milk, apple and orange juice in a bowl. Cover and refrigerate overnight.
  2. Stir orange rind through muesli and divide between serving bowls.
  3. Top with fresh raspberries, a dollop of natural yogurt and a sprinkling of pistachios.

Tips/Handy hints

  • Use strawberries or other seasonal fruits instead of raspberries if desired. Poached fruit such as pear, rhubarb, peaches, and apricots also work beautifully with this dish.
